Faux Kimichi Jjigae(Kimchi stew) recipe!
So if you like kimchi stew and dont want all the carbs of the gochujang/sugar in it I have a great recipe!
Ingredients:
1/2-3/4 head of cabbage(depending on how big your crock pot and cabbage are)
2-3 lbs of chicken legs(again depends on size)
2 cans of rotel
4-5 cloves of garlic(add as much or little as you want)
Paprika to taste
Salt and Pepper to Taste
1-2 cups of your favorite Frank's Hot Sauce(to taste - I used the extra hot version cause I like spicy food)
Optional: 1 12oz box of Diced mushrooms
Cooking directions:
I chop my cabbage into little smaller than bite sized chunks. Layering it at the bottom of the crock pot. Then I layer my chicken legs on top of the cabbage. Then I pour the Frank's hot sauce over both of these. Next comes the two cans of Rotel. Then I add the rest of the ingredients on top.
Toppings:
Ive found these mozerella pearls at walmart that I really like to drop a few in when the stew is still hot. They melt a bit and get gooey!
I really like cottage cheese in this dish after its cooked. It gives some more fat if you need it for your macros and it doesnt change the flavor of the recipe that much. Ive tried mayo before but it changes the taste too much.
If you like it a bit sweeter I recommend finding the Heinz No sugar added ketchup. It only has 1 gram of carbs/sugar per tablespoon. All you really need per serving is maybe 1 to 2 tablespoons. Fair warning it does use SUCRALOSE. This might be controversial to some. Again this is just an optional topping. Also the sucralose is one of the last ingredients on the list so there is probably only trace amounts of it.
This obviously makes a big batch. I would say youd probably get 5-6 or more very healthy servings out of one crock pot if not more.(being very conservative here). Im not really good at doing macros so if someone else wants to try to figure those out for me I'd be grateful. Any additonal info that Im able to share Ill be glad to do so.
