Spicy Thai Beef and Mushroom Keto Risotto (5.2g net carbs)
I’m calling this SPICY THAI BEEF AND MUSHROOM KETO RISOTTO
- 700g cubed beef
- 450g white mushrooms (6g net carbs)
- 125g salted butter
- 170ml Blue Dragon Thai coconut sauce (12g net carbs)
- 340g of pre-made cauliflower rice (8g net carbs)
- salt and pepper to taste
Recipe: Add butter, beef, mushrooms to pan. Once the mushrooms shrink and make lots of juice, add the packet of sauce and half a cup of water. Stir liberally so the sauce gets everywhere. After about ten minutes, once the sauce starts reducing, add the pack of cauliflower rice straight from the freezer. The cauliflower will suck up all the juice and leave you with a creamy mushroom risotto.
Total carbs: 40g Fibre: 14g Total net carbs: 26g
Makes 5 servings.
