Creme Fraiche

It's a delicious way to get in some extra fat, and goes great with raspberries or other low carb fruit. To make creme fraiche, mix 1 cup heavy whipping cream with 2 tablespoons buttermilk in a glass or plastic container. cover the container, and leave it out at room temperature for 12-24 hours (it's done when the mixture is quite thick and tastes somewhat like mild yogurt or sour cream. The longer you leave it out, the thicker and more tart it will be). Then stick it in the fridge, where it will thicken even more as it chills. That's it! If you want to add sweetener to taste, I recommend doing so right at the beginning, when you're combining the cream and buttermilk. If you stir it in afterward, the mixture seems to lose a bit of its thickness.
