Tzatziki
Basic Tzatziki is simple, easy and makes a great low carb accompaniment to lots of dishes or as a dip. This is a basic tzatziki recipe anyone can make! I love using this Tzatziki with my Greek Rissoles and it goes well with other lamb dishes too. You can even use it as salad dressing!
Tzatziki – Serves 6
500g natural Greek yoghurt
2 Lebanese cucumbers, deseeded and diced finely
1 garlic cube get the recipe here, or 1 tsp minced garlic
Juice from 1/2 lemon
2 tbsp extra virgin olive oil
1/2 bunch finely chopped mint
Salt and pepper
Combine all ingredients and mix well. Serve.
