Russian Tea Cakes (attempt)
We attempted making Russian tea cakes but ketofied. My wife doesnt like walnuts so we added some dried apricots.
This is our first attempt in adapting a recipe for keto. The good news is they taste delicious. The bad news is that we ended up with flatter cookies than desired so after some googling I think were going to try a couple things: maybe double the xanthan gum, refrigerate the dough for an hour, maybe add almond flour at 1.5:1 ratio for the regular flour.

Here is what we used:
- 1 cup of butter (room temperature)
- 1 tsp of vanilla extract.
- 54 grams of confectioner's Swerve.
- 3 grams of xanthan gum.
- 224 grams Almond Flour (next time I might add another 112 grams)
- 88 grams of dried apricots.
- confectioners Swerve for decoration.
Directions:
1. Preheat oven to 300 F.
2. Cream butter and vanilla together in a bowl using a hand mixer or stand mixer.
3. Stir in 54 grams of Swerve, 3 grams of xanthan gum, and 224 grams of Almond flour until combined.
4. Mix in the dried apricots (or whatever you're using for filling)
5. Roll dough into half inch balls and place on parchment paper about an inch apart.
6. Bake in the oven for about 8 minutes.
Notes: I would refrigerate the dough for about an hour so that it keeps its shape. I am also going to try using another 3 grams of xanthan gum next time.
If anyone has any other recommendations on how to keep the balls spherical shape it would be appreciated!
Edit: almost forgot the macros. We made half inch balls and they were about 65 calories, 1.5 g net carbs, 6 g Fat, and 1 g Protein per ball
