Keto Puppy Chow Bites
I love puppy chow and thought I would try out a keto-ish version. They are a bit higher in carbs than some would like but these are just my ingredients and I'm sure there are some better substitutes out there. I think they taste excellent and I like that they have a similar crunch to regular puppy chow.
Ingredients - 2 Cups Shredded coconut *60 Net Carbs 3/4 Cup Peanut butter - *60 Net Carbs 1/2 - 3/4 bag Lily's Dark Chocolate Chips *90 Net Carbs 3-4 Servings Powdered sugar substitute *9-12 Net Carbs
Preparation -

Place 2 cups of shredded coconut onto a skillet on medium. Continue to stir it around until most of it is browned.

Place chocolate chips and peanut butter into a small pan on the lowest heat. Continuously stir this until it is all blended together.

Once you have your browned coconut and choc/pb mixture, place it all together in a bowl and hand-mix it well.

Give it a few minutes to cool off and then make clumps on a piece of parchment paper. *I can make 18 with the melon baller I have

Sprinkle the powdered sugar on and you are good to go!
This is a stupid-simple recipe with TONS of room for changes/improvement. My ingredients totaled 11 Net carbs per bite at 18 bites. I know I could probably find some more keto-friendly peanut butter and shredded coconut to drastically reduce this number.
