Keto Meatballs Parmigiana SA

Amount Measure Ingredient -- Preparation Method

1 pound ground beef

3/4 pound ground pork

1/2 cup pork rinds -- crushed

2 cloves garlic -- minced

2 eggs

1 cup Parmesan cheese -- grated

2 tablespoons chopped Italian flat leaf parsley

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried onion flakes -- or sub 1/2t gran onion powder

1/4 teaspoon dried oregano

1/2 cup lukewarm water

1 cup olive oil

1 1/2 cups Pasta Sauce -- Cadia Organic red wine pasta sauce 5g

6 ounces mozzarella cheese -- or to taste

Zoodles -- optional

Preheat oven to 350F.

Combine beef and pork in a large bowl. Add garlic, eggs, cheese, parsley, oregano, onion flakes salt and pepper.

Blend crushed pork rinds into meat mixture. Slowly add the water. The mixture should be very moist but still hold its shape if rolled into meatballs. Adjust water to suit. Shape into meatballs.

Heat olive oil in a large oven proof skillet. Brown meatballs. When the meatballs are browned and drain skilleton a paper towel.

Bake for 15-20 minutes

Put meatballs back in skillet and cover with pasta sauce and cheese. Melt cheese and serve. Approx 5-8 minutes.

Serve over Zoodles or on their own.
