Green chile stew
This is a variation on NM-style green chile. This is not a TX tomato-based chile with beans.
- 1 lb ground meat (pork, beef, lamb, etc.)
- 1 small yellow onion (or half a large one) -- chopped small
- 1 Tablespoon chopped garlic
- 1 Tablespoon flour
- 1 package radishes, washed, and cut in half
- 1 quart chicken stock or broth
- 1 can Hatch green chile, hot (or to taste) (or two cans if you like it super spicy)
- heat one tablespoon of oil in the bottom of your soup pot, until it shines
- add ground meat and onions -- sauté until meat is fully cooked (no pink) and onions are translucent
- add garlic -- cook 30 seconds
- add flour (or other thickener -- maybe xantham gum? the flour here is the source of the carbs) and stir to coat
- add chicken broth, green chile, and radishes
- bring to a boil
- simmer for 30 minutes
- add more green chile and salt to taste
The radishes lose most of their radish-y flavor, and taste almost just like potatoes.
This was a huge hit at my house tonight, including a very picky eater who requested three servings (only stopped because full).
This is my favorite soup to eat when I get a cold, and I've been missing it ever since I went keto. I was really pleased with the radish substitution. Now I just need low-carb tortillas.
