Passion Fruit Mousse

Ingredients:

  • 150mL of Heavy Whipping Cream
  • 1 Medium Passion Fruit
  • 100ml of water
  • 1 envelope of unflavored gelatin (12-15g)
  • 60g of the Keto Sweetener of your choice (I use a combination of 60g of Erythritol + A few drops of sucralose until I find it sweet enough)
  • 10 drops of vanilla essence

Steps

  1. Whip the Heavy Whipping Cream until you reach chantilly consistency
  2. Separate the amount of passionfruit seed you want to decorate
  3. Blend the rest of the seeds, passion fruit juice, and water together.
  4. Use a fine strainer to pour the mixture in the whipped Heavy Cream.
  5. Put the rest of the ingredients (adjust sweetness to your taste) and keep whipping some more to mix the ingredients well.
  6. Serve, decorate with the Passion Fruit seeds and refrigerate the mixture overnight.
