Gaining weight despite eating less calories and exercising

I (37F) had a baby 2 months ago and have been trying to lose the 40 lbs I gained during the pregnancy. I have always been able to lose weight easily, but for some reason my body is holding on to the weight despite my attempts to lose. I’m not breastfeeding anymore, so that isn’t playing a part in my struggle.

I have been eating lower carb, higher protein, under around 1600 calories, and working out about 4-5 days a week. I was originally weightlifting, but due to the lack of progress in my weight lift I switched to cardio only in the last 2 weeks. I don’t drink soda, drink a gallon of water a day, and have cut back on any junk food significantly. I weighed myself this morning and am now 3 pounds heavier!

Does anyone have any experience dealing with something like this? Any tips? It’s making me want to give up and go back to my bad eating habits. 😩
