Broccoli Fried Rice with Chorizo

6 (2.5oz) Chorizo links

1 Bag of Green giant riced broccoli = 3 cups

4 eggs

1 cup of mushorooms (you can choose another veggie I used this one because I had extras from another recipe)

2 tbls of Kerrygold butter

1 tsp Minced Garlic

4 Tbls Coconut flakes

1.5 cup Shredded Cheese

3 crumbled pieces of bacon

Makes 5 servings each 404 cal 34.7 g Fat/5.7 g NC/ 18.3 g Protein

w/ Guac 449 cal 38.7g Fat/ 6.7 g NC/ 21.3 g Protein

Top with 2 Tbl of Mild Gucamole

Directions

  1. Simmer half of coconut flakes with frozen broccoli and veggies in butter and garlic.
  2. Once simmered crack 4 eggs into veggies and keep stiring at medium heat to cover all the veggies in all the eggs. Add cheese once cooked
  3. Cook the chorizo in a sperate pan and crumble it up as it cooks and add coconut flakes. Add to veggie mixture.
  4. Tear up bacon pieces and cook as you wish. Once done add to tops of main mixture and mix together all ingredients.
  5. Top with guacamole for best taste and enjoy!
