Chicken Salad with Bacon
Twist on boring egg salad. Turned out well, but I haven't finalized the recipe yet. I'd like to see if I can find some powdered Ranch seasoning without sugar/carbs in it. Then also add some more mayo to balance out the extra powder.
I also made a similar salad, using a 9oz can of tuna instead of chicken & bacon.
Serves 3
Ingredients:
- 6 eggs (I use large brown organic & cage free from Walmart - unsure of brand, was likely store brand)
- 2 tbs mayonaise (I use Duke's original)
- 1 tsp dijon mustard (I use Harris Teeter's HT Traders brand)
- 1 tsp lemon juice concentrate (I use the little lemon concentrate squeezie-lemon bottle sold in the produce section)
- 2 4oz cans of chicken (I used BumbleBee, 5oz each including liquid)
- 6 pieces precooked bacon (I used Oscar Meyer original PreCooked bacon)
- 1/4 tsp Lite Salt
- 1/4 tsp black pepper
Instructions:
- Boil eggs, once boiled peel & slice them. Place in large mixing bowl.
- Combine mayonaise, mustard, and lemon juice in small bowl. Once combined uniformly, place into large bowl with sliced eggs.
- Drain chicken from can, place into large bowl.
- "Shred" bacon slices by hand & place in bowl.
- Add salt & pepper
- Mix all ingredients in bowl until well combined
- Serve on lettuce leaves or low carb tortillas as a wrap (I used an Ole High Fiber tortilla, with 5g net carbs)
