Greek Rissoles
These Greek Rissoles are made with lamb (what else!) and are really easy to make. They have few ingredients and go really well with my Tzatziki. Usually rissoles from the shop are full of fillers and breadcrumbs and often coated with breadcrumbs also. We use to love buying different flavour combos of rissoles but I did recall when I was eating a lot of them, usually with sides like mashed potatoes, how much weight I put on.
Although I used to miss the rissoles from our butcher these are just as good and I love being able to come up with different flavourings! They go great with salad as a side, like this Greek Salad! If you like these make sure you also check out my Bacon, Onion and Sundried Tomato Rissoles too!
Greek Lamb Rissoles – Makes 4
500g lamb mince (ground lamb)
2 tsp dried oregano
lemon zest from 1/2 lemon
salt and pepper
2 tbsp olive oil
50g butter
Combine first 4 ingredients. Divide into 4 balls and flatten into rissoles. Heat butter and olive oil and cook rissoles on low heat making sure the middle is cooked through. If you’re worried don’t make the rissoles too thick. Fry on both sides until nicely golden and coloured.
Serve with Tzatziki and side of your choice, salad is a great option, try this Greek Salad!
