Question: Why does carb count for standard items (e.g. pecans, walnuts) vary so much?
I am not speaking of the difference between, say, roasted and salted nuts. I am curious about the difference between what should be identical products.
Even comparing between 2 or 3 different brands of raw walnuts I find that the carb count + fibre count to be quite varied. This has caused some hesitation in going ahead and buying bulk nuts (which are significantly cheaper) because I have no idea what their net carbs will be. Is it the processing that does it?
