Shrimp & Avocado Keto Recipe

UM YUM! This is seriously one of my FAVORITE quick and easy recipes! It is light and refreshing and perfect for summer evenings when the thought of being in the kitchen for longer than 15 minutes is just too much. It’s perfect for entertaining as well! The recipe is for 1 serving, but could easily be multiplied!
SHRIMP & AVOCADO WITH SPICY MAYO
INGREDIENTS
8 ounces Large Frozen Shrimp, Deveined and shelled
1 Avocado (60g)
1 Cup Cucumber, chopped
1 TBSP Green Onion
1.5 Tbsp Duke’s Mayo
1 Tsp Trader Joe’s Sriracha Sauce
1 TBSP Ghee
1 tsp Garlic Powder
Red Pepper Flakes to taste
Salt & Pepper
Sesame seeds
While my shrimp is thawing (Pro Tip: Put the frozen shrimp in a bowl of HOT water. They’ll be ready to cook in a few minutes!) I halve the avocado, scoop it out, and chop it into cubes, then I chop the cucumber into bite size pieces.
Once my shrimp are defrosted, I pat them dry with a paper towel, and heat up a pan with a tablespoon of ghee (you could also use butter or olive oil). I season the shrimp with garlic powder, red pepper flakes, and salt and pepper, then dump them into the pan.
While those are cooking for a few minutes, I make the spicy mayo with 1 tablespoon of Duke’s mayo and 1 tsp of Sriracha. Once the shrimp are starting to turn pink (usually about 3 minutes) and theres a bit of a golden crust developing, I flip them over and cook a few more minutes until done. While they are finishing, I plate the avocado and cucumber, sprinkle with salt and pepper and sesame seeds, and drizzle with the spicy mayo. Once the shrimp are finished, I put them on top and sprinkle with some chopped green onion.
I could honestly eat this every day! It’s so quick and easy, and SO satisfying- perfect if you are missing sushi!
