Chipless beef nachos salad - serves 4-5

I've been cooking keto meals for dinner for myself and my wife for a few months now, and decided it was high time I write down some of my experiments. I don't know the nutritional information for this dish sorry, but just judging by what ingredients I've put in, it should be pretty keto (the things to watch out for, I've marked in the ingredients). The instructions are a little relaxed as I'm not very exact when cooking as I judge things by the flavour and moisture as I cook. Also, if you have non-keto people to feed who would like some carbs, then it is very easy to just add some nachos chips along with this dish.

If there's any confusion, please let me know. I've re-read the instructions but I may have missed something out.

Meat sauce

- about half a kilo of beef mince (or lamb; emu; kangaroo; etc.)

- half a red onion, diced (leave out for less carbs)

- a few tablespoons of tomato paste (less than this for less carbs)

- 8-12 sliced mushrooms

- lots of crushed garlic (I use about a tablespoon)

- beef stock (liquid/powdered/jelly), about two cups, but i try to use less liquid than directed for the powdered or jelly type as you will end up having to reduce for longer anyway

- about a teaspoon of powdered cumin seeds (more or less depending on how strong you want the flavour)

- about a teaspoon of powdered coriander seeds (more or less depending on how strong you want the flavour)

- about half a teaspoon of powdered cinnamon (more or less depending on how strong you want the flavour)

- half or full capsicum (or as Americans call them, bell peppers), diced

- small amount of white wine (leave this out for less carbs)

- apple cider vinegar to taste (about one to two tablespoons)

- worcestershire sauce, teaspoon (leave out for less carbs)

- chilli peppers (more or less depending on how strong you want the flavour)

- butter

- coconut oil

- salt

Salsa

- half or full avocado, diced

- one or two tomatoes, diced (less for less carbs)

- half or full red onion, diced (less for less carbs)

- lemon or lime juice (to taste)

- olive oil (to taste)

Salad

- a few handfuls of baby spinach leaves

- one or two carrots, grated (leave these out for less carbs)

- 3-6 radishes, diced (less for less carbs)

- half or full capsicum (or as Americans call them, bell peppers), diced

- about a quarter cup of slivered almonds

- olive oil to taste

Final Ingredients

- 200-300 grams of streaky bacon

- cheddar cheese, grated

- sour cream to taste

- - - Directions - - -

  1. Prepare all your ingredients for the sauce (and just for good measure, read these instructions all the way through before beginning. Also, stir your sauce in the pot often).
  2. Put an iron skillet on high; and a medium to large pot on low. (Don't clean your skillet through any of the following instructions, we want to keep the flavour going until we deglaze it)
  3. In the skillet, add a little coconut oil and brown your onions (about 3 mins; don't forget to season with a little salt), then transfer to the pot.
  4. Add some more coconut oil to the skillet and brown the mince, and keep breaking it up so it's not all clumpy (about 5 mins; don't forget to season with a little salt), then transfer to the pot.
  5. Add the tomato paste and stock to the pot. Turn up the pot to high.
  6. Add the cumin, coriander seeds, and cinnamon to the pot.
  7. Put the bacon in the oven on grill (broil). I like to put it in the middle of the oven and turn that sucker right up to high. Keep checking so as to not burn it, but you want it nice and crispy. Took mine about 15 - 20 mins.
  8. In the skillet, add a little coconut oil, a little butter, the garlic, and brown your mushrooms. (about 10 mins; don't forget to season with a little salt)
  9. While the bacon is cooking, check your mushrooms and put them in the pot when ready.
  10. Deglaze the skillet with some white wine (or some water if heavily restricting carbs), reduce the wine, then add to the pot.
  11. Taste the sauce. You'll probably want to add some acidity, so some apple cider vinegar or lime juice should do nicely - start with one teaspoon and taste. Keep adding until happy.
  12. Add the chilli peppers to the sauce.
  13. Let the sauce reduce and be careful not to burn the bottom. Maybe turn down the pot so it's simmering.
  14. Check your bacon. Turn off the oven and set bacon aside.
  15. While the sauce reduces, prepare the salad and salsa ingredients.
  16. Pop all the salad ingredients in a salad bowl.
  17. Pop all the salsa ingredients in a bowl.
  18. Pop the half or full capsicum (bell pepper) (diced) into the sauce.
  19. Grate some cheese.
  20. Chop up the bacon roughly.
  21. Put some of the meat sauce on a plate and top with cheese, bacon, sour cream, and salsa. Salad on the side.
  22. Enjoy!
