Low carb chocolate milk

Had a chocolate milk craving, so I decided to experiment.

  • 1 pint unsweetened almond milk
  • 2 tablespoons 100% cacao powder
  • 4 tablespoons granular erythritol
  • (later added 1/8th tsp xanthan gum)

I put those in the blender and mixed it all up. Tried just stirring but the cacao powder wouldn't mix in.

This made a great-tasting but thin-as-water chocolate milk. So I took a page out of McDonalds' book and got out the xanthan gum from the cupbard. I sprinkled 1/8th tsp on top and stirred it in, then let it sit for a couple minutes.

Just like real chocolate milk made from whole milk. Total success!

Macros:

Calories: 60

Net carbs: between 1 and 2g

Sodium: 340mg

Fat: 5g

I suggest adding the xanthan gum at the same time as the other ingredients to get a much more thorough mixing.
