quick canned sardine stew
i love sardines but i don’t necessarily love eating them out of the can every single time so i quickly threw this together for breakfast. it reminds me of the spicy asian chili tomato sardines i used to eat but without the carby thickeners. add a fried or poached egg on top after cooking for extra fat and protein!
now that i think about it, it’d probably be good over zoodles too
ingredients:
1 tin sardines, fish and oil separated
1 clove garlic, minced
2 tbsp yellow onion, chopped
1/2 jalapeno, seeded and chopped
1 tbsp tomato sauce
vinegar to taste (this cuts the fishiness a little; i used 1 tbsp but i love vinegar)
red chili flakes to taste (i used 1/4 tsp)
salt & pepper to taste
directions:
heat sardine oil in a small skillet over medium heat. add the garlic, onion, and jalapeno and saute for a couple minutes until onions are translucent. add fish to the skillet and either leave whole or break apart to your liking. add tomato sauce, vinegar, chili flakes, and S&P. cook until heated through and at your desired thickness. eat
