Turn what you’d normally throw out into bone broth or soup.

In freezer bags, save bones and veggie ends (especially onions, celery and carrots). Onion paper skins -save them. Cheese rinds -those too.

When time allows one evening, throw it all in the largest pot you have. Cover with water—leave at least 2 inches from the top. Add spices like tarragon, rosemary, some other green stuff, and black pepper. Salt the shit out of it. Bring to a boil. Lower the heat and keep at a semi-covered simmer for 3-4 hours. Taste it to make sure you’ve salted it correctly.

You can let it cool and strain it that day or go to bed; the next day bring it to a boiled for 10 full minutes.

OR

Strain into a large bowl, pick through the stuff for soft meaty pieces and throw that into the bowl. Add some chopped onion, celery and carrots. Got veggies in the fridge about to go bad?—dice or chop them. Throw everything in the bowl back into that dirty pot! More salt? Mmmmyeah. Bring to a boil and simmer (about 45 minutes) until veggies are soft.

I shall call this “Garbage Soup”.
