Chocolate Decadence Brownie Cookies
These are my absolute favorite cookies. My stepmom makes them with primal ingredients but, unfortunately, that includes maple syrup. I managed to make them with keto ingredients tonight and I really can't tell the difference to be honest, minus that her primal version is a bit more sticky and gooey bc of the maple syrup.
Below is the recipe and macros and here is a picture of the ones I baked tonight (they're delicious!)
Ingredients: (makes about 40 cookies)
6 ounces Lily's dark chocolate chips
2 TBSPN salted butter
2 large eggs
1/8 cup Lakanto maple syrup*
1 TBSPN vanilla extract
1/2 cup blanched almond flour
1/4 teaspoon salt
1/4 teaspoon baking soda
3 ounces Lily’s chocolate chips
1.5 cups pecans, coarsely chopped
* You can also use real maple syrup here if you have the macros for it (makes them more sticky, gooey, and, of course, sweeter). My next batch, I am going to make it without the Lakanto syrup to see how it does as I'm not convinced it's even really necessary. Regardless, as written, they turned out amazing.
Instructions:
Preheat oven to 350F
In a medium pot, melt 6 ounces chocolate chips and butter over very low heat (I used a water bath)
Remove pan from heat
Using a hand or stick blender, mix in eggs, Lakanto syrup, and vanilla
Blend in almond flour, salt, and baking soda
Stir/fold (by hand) in additional 3 ounces chocolate chips and pecans
Use a 1 tablespoon cookie scoop to drop the batter one at a time onto a parchment paper or Silpat lined baking sheet (you don't need to push them down or anything, just leave them as is from the cookie scoop).
Bake at 350°F for 10-12 minutes
Cool for 1 hour
Store in an airtight container in the refrigerator (they also freeze wonderfully)
Total macros (with Lakanto syrup used) for entire recipe (divide totals by how many cookies your batch makes in order to figure macros for one cookie):
