Keto Cheesy Bacon Spinach filling (I made spinach "puffs")
I'm currently in a spinachy-cheesy craving mood, so it got me thinking that most cheesy spinach fillings are keto-friendly. I cut a Santa Fe tortilla (5 net carbs) in half and made 2 baked "spinach puffs" for dinner, which hit the spot since I love spanokopita. Here's the recipe and nutrition info I came up with, for the filling only since it's up to you what you want to put this filling in:
Cheesy Bacon Spinach Filling
-1 bag frozen spinach (defrosted and squeezed of as much water as possible) -1 cup chopped red onion (abt 1 med onion) -5 clovess garlic, crushed (I love garlic, you can def use less!) -1 tbsp EVOO to saute veg -1/4 cup sour cream -1/2 cup ricotta cheese -1/4 cup shredded mozzarella -1/4 cup shredded parmesan cheese (no need for the stuff from Parma, but if you have, live it up!) -1/4 cup feta, crumbled -1 egg yolk (can use leftover egg white to seal any dough you might use?) -2 slices thick-cut bacon, cooked and chopped/crumbled

Saute the onions in the EVOO with salt and pepper until translucent, then add spinach and garlic. Saute until water has cooked off and spinach is dry. Cool spinach filling.

Mix all the cheeses, egg yolk, bacon and cooled spinach together.
To make the "spinach puffs" I did tonight, just cut 5 low carb tortillas in half, separate the spinach filling into 10 servings, and fill the tortillas. You can use the leftover egg white to seal the tortillas. Easiest shape to make is a "cone" to fill the tortilla first, then try your best to seal all edges. No worries if you don't seal edges because this filling doesn't really melt or spill too much in the oven. Just try not to overfill.
I baked my puffs seal-side-down at 400F for 15 min, then turned them over for another 10 minutes to brown slightly on the other side. Let cool for about 10 minutes before eating because it's still cheese and piping hot!
Hopefully, you can all get creative with your own version of this. The nutrition stats aren't as bad as I thought.
