Keto Chicken Bacon Caesar Casserole

Ingredients: 2-2.5 pounds chicken (I used boneless skinless thighs) cubed/in strips 6 strips bacon 1 medium yellow onion, diced 2 cloves garlic, minced 10-12 oz frozen spinach, thawed and drained 8oz cream cheese, softened 4 oz sour cream 4 oz mayonnaise 1 cup Monterey Jack cheese Salt and pepper to taste

Instructions: Fry bacon until crisp. Use drippings to cook chicken until it reaches at least 160°F. While chicken cooks, mix together cream cheese, sour cream, and mayonnaise. Set aside chicken when cooked and then add cream cheese mixtue. Sautee garlic and onion until tender. Add to chicken along with spinach and bacon.

Cook at 350F for 30 min and then add cheese over top and bake for 5 more minutes.
