Keto Chicken Cordon Bleu
Keto Chicken Cordon Bleu, 4 servings
Ingredients:
- 2 lb (900g) Chicken Breast (4 breasts)
- 8 slices Provolone Cheese
- 8 Slices Black Forest Ham
- 2 Cups (78g) Pork Rinds, crushed
- 1 Extra Large Egg
- Optional, add salt and pepper to taste
Instructions:
- Preheat oven to 375F (190C)
- Butterfly Chicken Breasts and pound until thin and flat.
- Add 2 slices of ham, and 2 slices of provolone per breast on top butterflied chicken.
- Roll into tight chicken rolls.
- Use a fork to mix egg.
- Coat chicken with egg.
- Crush or use food processor to make pork rinds into breadcrumb like consistency.
- Roll chicken into pork rind breading.
- Place in Pyrex or Metal dish and bake for 25-40 minutes or until thoroughly cooked. May take longer depending on thickness of chicken breasts.
