Keto Chicken Cordon Bleu, 4 servings

Ingredients:

  • 2 lb (900g) Chicken Breast (4 breasts)
  • 8 slices Provolone Cheese
  • 8 Slices Black Forest Ham
  • 2 Cups (78g) Pork Rinds, crushed
  • 1 Extra Large Egg
  • Optional, add salt and pepper to taste

Instructions:

  • Preheat oven to 375F (190C)
  • Butterfly Chicken Breasts and pound until thin and flat.
  • Add 2 slices of ham, and 2 slices of provolone per breast on top butterflied chicken.
  • Roll into tight chicken rolls.
  • Use a fork to mix egg.
  • Coat chicken with egg.
  • Crush or use food processor to make pork rinds into breadcrumb like consistency.
  • Roll chicken into pork rind breading.
  • Place in Pyrex or Metal dish and bake for 25-40 minutes or until thoroughly cooked. May take longer depending on thickness of chicken breasts.
