Leftovers lunch! Pretty obsessed with TJs teeny tiny avocados.

Just a reminder that leftovers don't need to be boring!

At first I looked at the bowl I made for lunch and wasn't super excited about it - some roasted cauliflower leftovers from last nght (roasted 30 min with olive oil and sprinkled with harissa spice blend) plus some leftover chicken from the night before (Trader Joes marinated chicken pesto genovese pan-fried with ghee).

But then I sprinkled a little bit of freshly chopped green onion, cut up a TJ's teeny tiny avocado (these are SO perfect for single serving!), and squeezed a little lemon juice on top, and bam! It brought all the flavors together in a new way and breathed whole new life into the meal. Filled me up for a good 6 hours.

This ended up around 11g net carbs, 29.3g fat, and 45g protein.
