Fathead Dough Savoury Scrolls - 3 ways! Recipe video in description
Ingredients
Dough:
- 3 cups mozzarella
4 tbsp cream cheese
- 1.5 cups almond flour
- Pinch of salt
- 3 eggs
Toppings
- 1 tbsp vegemite
- 1/2 cup grated tasty cheese
- 1 tbsp cream cheese
- 2 tbsp feta, crumbled
- 1/4 a tomato, finely sliced
- 1.5 tsp tomato paste
- 5 olives
- 2 tbsp parmesan, grated
- Italian herbs
Instructions

Melt the mozz and cream cheese for the dough in the microwave for 90 seconds

Stir well, then add the almond flour, salt and eggs

Stir this until it comes together as a dough, then knead with your hands until it is smooth

On a sheet of baking paper, pat the dough out into a rectangle that is about 1/2cm thick.

Melt the cream cheese and vegemite together, grate your cheese and slice the tomato and olives

In section 1, spread the vegemite cream cheese mixture on the base, then top with cheese

In section 2, lay down the tomato slices, top with crumbled feta and herbs

In section 3, spread the tomato paste and top with olives, parmesan and herbs

For each section, gently lift the end of the dough closest to you, and roll it away from you to form a pinwheel. Slice each roll into 4 individual scrolls.

Spray some oil onto a baking sheet and lie the scrolls out, flattening them out with your hand

Bake at 180 degrees celcius for 15-20 minutes, or until the scrolls are brown on top
