Italian 7-layer Cookies

Anyone have a recipe for the almond sponge like cake that would go into the 7 layer cookies? You know the cookies with the chocolate, almond sponge, and raspberry jam layers. The Jam, chocolate tops and bottoms are easy to replicate with low carb alternatives but I haven’t been able to find the almond sponge. It’s of a medium density and is usually made with flower, almond paste, eggs, and milk. I’ve learned I can’t just take a recipe and change out the ingredients, so was wondering if anyone has a good recipe or something close.
