Sausage frittata for meal-prep
Sausage Frittata
Is this technically a "frittata"? Beats me. It's been a great go-to breakfast for the work week. I like to go heavy on the eggs.
Ingredients
- 18 eggs
- 1 lb turkey sausage (you can use pork sausage too, but turkey is lower calorie and hard to tell the difference in the finished product)
- 1 green or red bell pepper
- 1 onion
- 1 small can sliced mushrooms
- 4 oz sharp cheddar
- A healthy dash each of garlic powder, onion powder, and MSG
- A small dash of cayenne pepper
- Cooking spray or other fat of choice
Method
- Preheat your oven to 350F. If you have a fan/convection feature, use that. Grease a 9"x13" (or similar capacity) oven-safe casserole dish.
- Chop up your pepper and onion. Doesn't have to be super-finely diced, but smallish chunks. Also drain the can of mushrooms. Set all of these aside.
- Grease a large skillet and use it to brown your sausage at high heat until it's cooked through and most/all of the water has cooked off.
- Add the onion, pepper, and mushrooms to the skillet and continue to cook until the onion bits are barely translucent.
- Remove your skillet from heat and dump the contents into the greased casserole dish.
- Turn your attention to the eggs. Crack them all into a medium mixing bowl and add your seasonings and a splash of water. Whisk these until well-combined (I use an immersion blender).
- Top the fillings in the casserole dish with your cheese, then pour the beaten eggs right over top - the eggs will just sort of disperse evenly and fill up your dish.
- Bake for 30-35 minutes, let cool, and serve/save covered in the fridge.
