Best keto tortilla I’ve ever made - and it’s easy!

I’ve tried fathead dough for tortillas, “keto everything” dough for tortillas, and just straight melted cheese for tortillas, but I never was satisfied. Tonight, I experimented, and managed to hit the jackpot! They taste like deep fried dough, because the psyllium husk absorbs the fat while it cooks, and they’re malleable enough that you don’t have to deal with them getting too hard when they cool, like you do when using melted cheese. Also they were SO much easier than the fathead dough or everything keto dough recipes. I can’t recommend these enough.
Ingredients (for 2-4 shells, depending on how large you make them)
1/2 cup shredded mozzarella
1/2 cup shredded Mexican blend cheese
1/4 cup psyllium husk
Mix everything together well, and then use that mixture to create a 6-7 inch diameter circle in a pre-heated pan (I used a cast iron). Cook til the first side is browned, flip, and cook til the other side is browned too (Shouldn’t take more than 3 minutes total). Top with WHATEVER YOU WANT. I went with leftover pulled pork green chili, sautéed jalapeños and onions, and sour cream. Oh, and more cheese, cus keto.
