Favorite 'Egg Thin' recipes?

I just got the large egg thins from costco and have only been using them like a tortilla.

What are some of your favorite ways to use them? I'm thinking chimichangas, enchiladas, quesadillas, but want to expand my palate beyond Hispanic foods, since I'm Hispanic and its pretty much all i really know how to cook.

But please! If you have a bomb Hispanic recipe, throw it in!
