Simple cake recipe for relatively large pan? (Almond flour and Swerve)
I'm looking to make a cake in a metal 17"x13"x3" pan. I'm thinking I could try out something basic first, and then try out different extracts and icings later once I have a good baseline down. I'm really interested in some kind of whipped cream frosting.
I did a quick search earlier and it seems like the core involves some flour, sweetener, eggs, and butter, along with vanilla extract for flavor. This sounds like it'd be pretty good.
Alternatively, if a 17x13x3 pan would be too large to work ideally (maybe burning the edges before the middle gets done or something), I have smaller pans around. I'd like a recipe that can scale up, or just have the sizes good enough for the large pan though.
My ideal non-Keto cake was yellow sponge cake with vanilla whipped-cream frosting. Last time I made cake, I used some random boxed cake mix and used milk (replacing water) and lard (replacing vegetable oil), and it was pretty good. I'd like to make something like that from scratch though with low-carb ingredients.

- Almond flour
- Coconut flour
- Vanilla extract
- Eggs
- Heavy whipping cream
- Swerve (regular and confectioners)
- Baking powder
- Lard and butter
- Cocoa powder
- Almond slivers
- Probably various other stuff
