Do we overeat because we lack the sufficient vitamins and minerals in our diet?

Consider that having 5 different portions of fruit and vegetables will have a myriad of different vitamins and minerals, and that having eggs, meat, dairy or your vegetarian/vegan equivalents will have your proteins and fats, and that natural olive oil will have natural fats...

This sort of diet will have every vitamin, mineral and macronutrient you'll need.

But when you're constantly eating white rice, white bread, processed food with empty calories and very little nutritional value except for simple sugar and simple foods which release energy quickly, you don't get any vitamins or minerals, at least nowhere near as much as you need.

I feel like this is one reason why I used to overeat. I used to literally sit down and scoff an entire packet of biscuits, a large bag of crisps and I'd be able to eat a seemingly unlimited amount of pasta and candy, but I'd still be hungry an hour later. My body was basically saying "thanks for the energy, but where are my vitamins and minerals? Come on buddy, I'm desperate!"

These days, I am trying to lose weight at the rate of 0.5-1 lbs per week. I've lost 2 lbs per week before and the diet was horrendously unsustainable and no surprise, I gained it all back.

I've decided to change my diet for life, and I've been eating around 5 portions of fruit and vegetables per day and eating eggs most days, among other things. I only ever eat junk food for social reasons. Now? I rarely feel hungry anymore. At least, my hunger is about 25% of what it was. I now know why, when I'd tell my parents I am hungry, they'd tell me to eat some fruit.

Short term it only curbs your hunger for maybe an hour, but after literally 2 or 3 weeks of "eating clean" I genuinely think that my hunger is less.

I wonder if my theory of being deprived of nutrients from eating shitty food is the reason why the majority of people in developed countries are overweight or obese?
