Is consistent losing without counting calories even feasible?

I've had three different therapists specifically advising me against counting calories, one even told me it's wiser for me to not keep a food diary when I asked. I've never had a diagnosed ED, but I have a tendency to hyperfocus on things, so I understand somewhat where they're coming from. Currently I'm trying to portion control, using smaller dishes and restricting snacks, but I'm not seeing an improvement in my weight. Even accounting for my larger skeletal frame, I'm about 10kg overweight, and about 15kg from my ideal weight. I've been going to the gym for the last month and a half, four days a week, one hour each. When I'm done I'm absolutely drenched. I've not even lost a kilo, I'm only building muscles. I know that muscle is denser than fat, but I'm not fit enough to be so overweight based only on my muscle mass. Am I just impatient, or am I doing something wrong? How do I (somewhat) reliably controle my calorie intake without actually keeping count, or a food diary?
