DAE struggle to find a middle ground between binging and undereating?

Hi. I [24M] have struggled with my weight (~260 as of now) for a lot of my life. I've decided to commit to losing weight for hopefully the final time, as the past two times I ended up stopping my diet because I was struggling to eat enough and I was so tired and irritable because of it. I did the simple thing: cut out all junk food, count calories, etc. The problem was that I regularly undershot my calorie margins by a 500-600 due to...just cutting out junk food. I eat to feel good, and when I stop eating a lot of the foods that make me feel REALLY good, I just kind of lose interest in eating. My question is: has anyone else struggled with not eating enough when they're not overeating, and if so, how did you deal with it?
