When I record the food I eat, my eating pattern drops wildly

I have a strange problem that seems to go so against what anybody else experiences so badly that the one time I brought it up IRL the person I was talking to thought I was taking the piss out of them and got angry.

I am 34M 182cm SW143kg CW122kg GW80kg, and I've been recording my food since near the beginning of August (about 11 weeks according to MFP). I entered 1kg a week for MFP as a goal and sedentary, it was originally saying 2050 or so calories per day, now with my current weight it is about 1500, and then Fitbit likes to add anywhere from 100 to 1000 depending on what I do through the day.

The way I gained the weight was eating/drinking to keep working - first as a uni student, then working a software job, I would plow through energy drinks at my desk, drinks at the bar after work, continue working and drinking at home after finishing up at the bar, meals were of the Uber Eats variety, I'd guess I would go through easy 4-5kcal a day.

But when I started actually recording the numbers, it suddenly made me realise how many calories were in a can of red bull or a pint of stout, and I just haven't been doing that, like at all. I still have no time to cook, but instead of Uber Eats I grab whatever sort of frozen healthy meal thing is on offer, or prepackaged hommus or whatever.

So now I'm finding myself, without ever meaning to, hitting only like 1000kcal a day if I'm lucky, and obviously losing the weight at a rate that everyone says is unhealthy. I take a multivitamin in the mornings (have been for years), and I haven't experienced anything bad with hair or nails or whatever, my strength is going up if anything - I don't even feel hungry.

Should I be chasing the amount I'm told I should be eating? I thought at the start I must have just been recording things wrong, because supposedly everybody does, but I'm losing about 2kg a week, so it can't be that far off. What should I be looking out for as warning signs?
