Keto Supreme Pizza Chicken

Hi. I invented this last night. It was so good. Enjoy!

You will need:

1-2 serrano peppers

1 pobano pepper

Italian seasoning

Chopped garlic (or garlic powder, whatever)

Mushrooms

Half an onion

2 cups plain Greek yogurt and/or mayo (it can be light mayo too, that's fine)

Thinly sliced chicken breasts

Baby tomatoes

Mozzarella cheese (or whatever cheese is in your fridge, but if you want it to really taste like pizza, mozz is the way to go)

Optional: Bacon, ham or pepperoni pieces

Begin by chopping your peppers, mushrooms and onions and sautee them in a pan with olive oil. I added some chopped garlic to mine. Cut your baby tomatoes into quarters or halves (don't cook them). When your veggies are cooked and just slightly crispy, add them all to a mixing bowl.

To your mixing bowl, add the Greek yogurt and mozzarella. You can add any other cheese you like, it will still taste delicious. You can also substitute mayo for Greek yogurt, or do half and half. Stir it all up and taste it. If you want some more seasoning, add a little onion powder or salt and pepper.

Season your chicken with some Italian seasoning, garlic salt, and pepper. I added a little chili powder to mine. Crank up the heat on the stove and sear the chicken on the same pan as the veggies but just a couple minutes on each side, don't cook all the way through.

Layer the chicken in a casserole dish. Add the mixture to the top and coat each chicken thoroughly. You will want to put quite a bit on each chicken breast, because it's delicious and you'll regret it if you skimp out.

Pop in the oven at 375 and cook for about 30 minutes. If you want some pepperoni or ham or bacon bits, just add them on top of the chicken.
