protein waffles - how to make less dry?
I saw this protein waffle recipe from Keto Connect: https://www.youtube.com/watch?v=xM-DSkn_Oek
Ingredients:
1 scoop (30g) protein powder
1 tbsp butter
1/4 tsp baking powder
1 large egg
1/4 tsp Pink Himalayan Salt
liquid (water, almond milk, flax milk) to thin out the batter
Many of the commenters noted how dry their waffles turned out, with some saying they were inedible. I'd be using whey protein, so I'm sure mine would turn out dry as well. Any suggestions on countering this effect? Maybe doubling the butter to 2 tbsp?
Update: I went ahead and made this, except I used whey protein, 2 tbsp butter, and for liquid, I used heavy cream. Mixed thoroughly with a fork and that turned out to be sufficient to get rid of the clumps of powder, which makes cleanup easier than if I had to use a whisk. This was enough batter for 3 Dash-style mini-waffles. They were a little dry, but not terrible, and once I slathered some softened cream cheese on them, they were quite decent. Would make again, though I'd definitely be interested in suggestions to make them less dry while still using whey protein. I suppose the obvious modification to try is bumping up to 3 tbsp of butter.
