Keto Crescent Rolls
Hey all,
Just made these and wanted to post because they had me excited. These are actually crispy and as far as keto bread subs go, pretty easy to make. The hardest part is waiting for the dough to chill.

INGREDIENTS
96 g almond flour
40 g coconut flour
1/2 teaspoon xanthan gum
1/4 teaspoon kosher salt
100 g organic grass-fed butter cold
55 g cream cheese cold
1 egg lightly beaten
2 teaspoons apple cider vinegar
My additions/notable changes:
I added ~1/4tsp butter flavor extract to the dough when the egg was added. I believe this may be key to really giving it the dinner roll flavor.
I don't use anything special for almond flour. Just standard Bob's Red Mill with the brown bits.
I used a pastry cutter to mix my dough because I don't have a food processor. This is totally do able. You can probably also mix with your hands, just be sure to pinch the dough apart to make it crumbly and use gloves if you have them.
To make the crescent shape:
Roll out the chilled dough into the best circle you can, trying to get it relatively thin as like when making the pillsbury crescent dough stuff. Refrigerate after rolling it out.
Once it is chilled again (15 min), use a knife or pizza cutter to cut the dough into slices like a pizza. Starting from the wide end, carefully loosely roll up the dough. It may stick to the parchment paper as you do this, just use the cutter or your fingers to scrape it off gently and keep rolling. Once they are rolled up you can pick them up easily and transfer to a lined baking sheet. Try not to squish the dough together, you want air pockets.
Bake at 350 for about 25 minutes. At 20, start looking at the rolls in the oven and pull them out when they are golden brown. Mine still had that light doughy texture in the middle which was just right.
