What can I do to make my (baked) buffalo wings taste better?
I apologize if this isn't the best place for this but I am on keto and buffalo wings are a go-to for me.
I make buffalo wings a lot, since finding the method of cooking them where you coat them in baking powder and bake them. The problem is, they always seem to come out less tasty than any nearby Wingstop or pizza joint.
I think my wings have two flaws but I don't know how to address them:
- The sauce sucks. It's not /really/ "bad" but it doesn't taste as "buffalo-y" as it could. My typical preparation for a basic sauce uses 2 parts hot sauce to 1 part butter. I can usually add garlic or lemon pepper or something from there to vary the flavor. But for whatever reason, even if I just stick to classic Frank's Red Hot and butter, it doesn't taste like the sauce I get at any wing restaurant. Slightly inferior, not as spicy, tastes more like hot sauce with butter in it than buffalo sauce.
- The wings might be missing the oily taste that fried wings sometimes have. I don't know if this would be the culprit of not tasting up to par, but I can't really fry stuff in my apartment. I do own a fryer but have been smoked out before, and the cleanup is just not something I'm willing to put up with. My guess is that wings that are fried have a peanut-oil residual taste or something. But I'd doubt that'd make that much of a difference.
I've tried different hot sauces, but they don't bring quite the right flavor most of the time. Pre-made buffalo sauces are very hit or miss, but most often taste kinda like they have some fillers or preservatives added. So it's less authentic there.
I suppose I also could season the wings before baking them (even if they will be coated in sauce). Since I'm not frying them, the seasoning isn't going to fall off in the fryer. But is there even seasoning that can give something a more fried taste? I'm not sure.
On a day I'm making wings, I'll take frozen wings, shake them in a bag with some baking powder, and bake them in the oven at 375 F for 80 minutes. When they come out, I'll only briefly let them cool (just so that they won't melt the sauce dish) and then shake them in the sauce.
Is there anything obvious I can do to improve my wings? If I can get them to taste at least as good as the stuff from the restaurants that would be an upgrade, but I'd like to be able to outdo them if possible.
